Ingredients
Makes: 4 cups- 1/4 cup unsalted butter
- 2 ounces Virginia ham, chopped
- 1 onion, chopped
- 1 carrot, thinly sliced
- 1/4 cup flour
- 4 cups beef broth
- 1 1/2 cups chicken broth
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 1/2 cup dry red wine
Preparation method
Prep: 10 mins | Cook: 45 mins1. Melt butter in a Dutch oven set over medium heat. Cook ham in melted butter for about 8 minutes to brown, then stir in onion. Cook for 5 more minutes, then add carrot and continue to cook until both vegetables are softened.
2. Dust onion and carrot with flour and stir. Slowly pour in 3 cups beef broth, chicken broth, tomato paste, salt, thyme, and black pepper, stirring well. Let the mixture come to a boil and simmer for about 30 minutes to thicken slightly.
3. Pour the sauce through a fine wire mesh colander into another saucepan. Add 1 cup beef broth and wine. Return to heat.
4. Simmer the sauce until it has reduced down to about 3 1/2 cups in volume. Serve with cooked pork or other lean meats.
