Ingredients
1 kg | leeks, trimmed, cut lengthways, shredded |
200 g | prunes, pitted |
fresh lime juice | |
some | butter |
salt and pepper, to taste |
Instructions
Heat a large frying pan over a high heat, add the prunes and toss around for 30-40 seconds.Turn heat off and let the pan cool off. Then add a knob of butter, put over a medium heat and add the leeks. Season with salt and black pepper. Sauté for 2-3 minutes turning frequently.
Add the prunes, another knob of butter and a bit of fresh lime juice. Toss thoroughly and then remove from the heat.
