Saut ed Leeks with Prunes recipe

|1 kg||leeks, trimmed, cut lengthways, shredded|
|200 g||prunes, pitted|
|fresh lime juice|
|salt and pepper, to taste|
Heat a large frying pan over a high heat, add the prunes and toss around for 30-40 seconds.
Turn heat off and let the pan cool off. Then add a knob of butter, put over a medium heat and add the leeks. Season with salt and black pepper. Sauté for 2-3 minutes turning frequently.
Add the prunes, another knob of butter and a bit of fresh lime juice. Toss thoroughly and then remove from the heat.
