Ingredients
Serves: 10- 4 pounds sweet Italian sausage, separated links
- 3 tablespoons olive oil
- 4 large green peppers, sliced
- 4 large red peppers, sliced
- 1 large Vidalia onion, sliced
- 1 (28 ounce) can diced tomatoes, Italian-style
- 1 (28 ounce) can of pureed tomatoes
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon chopped basil
- 1 teaspoon chopped mint
- 1 teaspoon Italian seasoning
Preparation method
Prep: 10 mins | Cook: 2 hours1. In skillet over medium heat, cook sausage in 1 1/2 tablespoons olive oil until brown and no longer pink in the middle, about 18 minutes.
2. In a large saucepan over medium heat, cook peppers and onions in remaining olive oil until softened, about 5 minutes.
3. Cut the fried sausage into small bite-sized pieces and add to the peppers and onions. Let cook about 5 minutes.
4. Add the tomatoes with a little water to clean out the can. Add seasonings and let simmer for about 1 to 1½ hours.
