Do you need to make sausage and peppers for a bunch of people? This sausage and peppers recipe allows you to make lots of this favorite food in an easy fashion. You can serve it as a side dish or on a bun.

Ingredients

Serves: 10
  • 4 pounds sweet Italian sausage, separated links
  • 3 tablespoons olive oil
  • 4 large green peppers, sliced
  • 4 large red peppers, sliced
  • 1 large Vidalia onion, sliced
  • 1 (28 ounce) can diced tomatoes, Italian-style
  • 1 (28 ounce) can of pureed tomatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon chopped basil
  • 1 teaspoon chopped mint
  • 1 teaspoon Italian seasoning

Preparation method

Prep: 10 mins | Cook: 2 hours

1. In skillet over medium heat, cook sausage in 1 1/2 tablespoons olive oil until brown and no longer pink in the middle, about 18 minutes.
2. In a large saucepan over medium heat, cook peppers and onions in remaining olive oil until softened, about 5 minutes.
3. Cut the fried sausage into small bite-sized pieces and add to the peppers and onions. Let cook about 5 minutes.
4. Add the tomatoes with a little water to clean out the can. Add seasonings and let simmer for about 1 to 1½ hours.
