Italian sausage garden soup recipe details
A good friend of ours brought this soup to us shortly after the birth of our first child. It’s very hearty, simple to make, and has a wonderful flavor. An alternate method to prepare this soup is to mix all the ingredients in a slow cooker and cook on low for 5 hours.

Ingredients
Serves: 6- 1 pound Italian sausage
- 1 medium onion (chopped)
- 1 1/2 can of water
- 1 teaspoon basil
- 2 medium zucchini or yellow squash
- 1 (16 ounce) can of tomatoes
- 1 (16 ounce) can of garbanzo beans (drained)
- 1 (10 1/2 ounce) can beef broth
- Parmesan cheese
Preparation method
Prep: 20 mins | Cook: 1 hour1. Cook sausage and onion together until sausage is no longer pink. Combine all ingredients except Parmesan cheese in large kettle. Heat to boil, then simmer until zucchini is tender. Serve with sprinkled Parmesan cheese.
