- Ingredients
- 1/2 pound sausage
- 6 eggs
- 1/2 cup cottage cheese
- 2 green onions, chopped
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon salt
- 1/2 teaspoon hot sauce
- 12 ounces frozen O’brienpotatoes, thawed
- 2 cups shredded cheese (divided)
This is an easy and favorite recipe of our guests at the Loganberry Inn B&B.
Crumble and cook sausage. Mix eggs, cottage cheese, green onions, pepper, salt, hot sauce, potatoes, and 1/2 of the cheese. Spray a 9- or 10-inch quiche dish or glass pie pan with cooking spray. Put egg mixture in dish, top with sausage, and then the remaining cup of cheese. Bake 30 minutes at 350 degrees.
