Ingredients
100 g | bacon |
1 | red bell pepper |
1 | onion |
1 clove(s) | garlic |
300 g | sauerkraut |
250 g | potatoes |
2 tbsp | vegetable oil |
15 l | vegetable stock |
mild paprika powder | |
salt and pepper | |
2 tbsp | sour cream |
Instructions
Dice the bacon. Seed and dice the bell pepper. Finely chop the onion and the garlic. Drain and roughly chop the sauerkraut. Peel and dice the potatoes.Sauté the onion and the garlic, then add the bacon. Add the bell peppers and the potatoes and sauté for another minute, then add the sauerkraut with the vegetable stock and season with salt , pepper and paprika. Simmer the soup for approximately 30 minutes. when the potatoes are cooked, mash the soup with a masher for potatoes. Correct the seasoning if necessary.
Ladle the soup into soup plates or bowls and serve each with a dollop of sour cream.
