Ingredients
For the saté: | |
500 g | chicken breast |
2 | shallots |
ginger, 2 cm | |
1 stalk(s) | lemon grass |
1 tbsp | soy sauce |
½ tsp | salt |
125 ml | coconut milk |
2 tbsp | peanut oil |
4 | skewers |
For the Dip: | |
1 | red onion |
2 | ripe mangos |
1 | ripe pear |
2 tbsp | apple juice |
2 tsp | curry powder |
½ | lemon, juice |
salt and pepper |
Instructions
Cut the chicken breast in small cubes. Finely chop the shallots. Peel and finely grate the ginger and finely chop the inner part of the lemon grass. Mix shallots, ginger and lemon grass with the soy sauce, salt and coconut milk. Place the meat into the mixture and leave to marinate for 8 hours.For the dip finely chop the red onion. Peel the mango and cut the flesh from the stone. Peel, core and quarter the pear. Place mango, apple juice and pear into a blender and process until smooth. Mix in the onion and season to taste with curry powder, lemon juice, salt and pepper.
Drain the meat and spike onto the skewers. In a skillet, heat the peanut oil and sauté the skewers on each side for 5 minutes. Serve with the fruity dip.
