Sarah’s Black Bean Salsa

A nice flavorful Southwestern salsa that is great when served hot! If you want it with a little more kick use a hot picante or add some hot sauce or cayenne to the mix.

Ingredients
Serves: 10
- 2 tablespoons butter
- 1 onion, diced
- 2 garlic cloves, minced
- 2 (15 ounce) cans black beans, drained
- 2 tomatoes, seeded and diced
- 2/3 cup picante sauce
- 1 (12 ounce) can white corn
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 3 tablespoons chopped fresh parsley
- 3 tablespoons chopped green onions
- 3 tablespoons chopped fresh cilantro
Preparation method
Prep: 10 mins | Cook: 10 mins
1. Melt butter in a medium saucepan over medium heat; add onion and garlic, and saute until tender. Stir in everything but parsley, green onion, and cilantro. Cook, stirring occasionally, until thoroughly heated. Stir in parsley, green onion, and cilantro. Serve warm.
