The mixture of spices produce a dark red roasted chicken that is simply delicious. Turkey comes out well also – just triple the rub ingredients and adjust the cook time for the size turkey you are preparing.

Ingredients
Serves: 4- 1 whole chicken
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon ginger
- 1/4 teaspoon curry
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt (optional)
Preparation method
Prep: 15 mins | Cook: 35 mins | Extra time: 10 mins, resting1. Preheat oven to 450 degrees F (230 degrees C).
2. Mix spices in a bowl. For a healthier approach remove skin from chicken. Sprinkle spices all over chicken rotating chicken until completely covered.
3. Place chicken in 13×9-inch oven-safe pan. Use a roasting bag for best results.
4. Bake chicken in the preheated oven for 35 minutes or until meat reaches an internal temperature of 160 degrees F.
5. Remove from oven and allow bird to rest for 10 minutes.
