- One 15-ounce box raisin bran cereal
- 3 cups sugar
- 5 cups flour
- 5 teaspoons baking soda
- 4 eggs, beaten
- 1 cup oil
- 1 quart buttermilk
- 1 cup raisins (and some nuts, if you prefer)
Despite the less than appetizing moniker, these muffins are delicious! We call them ugly because the batter is gray-brown and lumpy. but what makes for unappealing batter also makes for a pleasingly attractive browned and textured muffin. And if you think that’s a mouthful, wait until you can’t stop eating them! The batter can be made well in advance, so sit back and enjoy your muffins in a clean kitchen.
Combine all ingredients. Cover with kitchen film so there are no air pockets, and refrigerate. This great make-ahead muffin batter will keep quite well for a month! Cook at 375 degrees for about 15 minutes. The batter makes better muffins after it has been mixed for several hours.
