Instructions
Preheat oven to 200°C.Toss leeks with oil and season with salt and pepper. Roast in oven, tossing once, until beginning to soften, 12 to 15 minutes. Remove leeks from oven and keep warm.
Arrange salmon pieces in the centre of the baking dish and season with salt and pepper. Roast salmon for 10-15 minutes, depending on thickness.
Serve salmon with leeks and lemon wedges.
