Ingredients
750 g | potatoes |
2 | cucumbers, peeled and sliced |
200 g | sour cream |
5 tbsp | oil |
350 ml | vegetable stock |
salt and freshly ground black pepper | |
4 | salmon fillets, approx. 200g each |
60 g | horseradish, freshly grated |
1 tbsp | butter |
2 tbsp | flour |
200 g | single cream |
1 bunch(es) | dill, chopped |
2 tsp | salad herbs |
1 tsp | lemon juice |
1 tsp | vinegar |
Instructions
Cook the potatoes in salted water for 25 minutes. Drain, peel and slice the potatoes.In a bowl, mix together the sour cream, lemon juice, vinegar, half of the dill, sugar and the salad herbs. Season to taste with salt and pepper. Add the cucumbers and mix well.
In a pan, heat 2 tablespoons of oil. Fry the potatoes until golden and crispy. Season with salt and pepper.
In the meantime heat the remaining oil in a pan and fry the fish for 2-3 minutes each side. Season with salt and pepper.
In a small saucepan, melt the butter. Dust with the flour and cook stirring until pale yellow. Whisk in the vegetable stock and the cream and bring to a boil. Add the horseradish and cook stirring for 5 minutes. Season to taste with salt and pepper. Stir in half of the dill.
Serve the fried potatoes with the salmon, the horseradish sauce and the salad.
