salmon and herb loaf recipe details
Ingredients
butter, to grease the tin | |
breadcrumbs, to coat the tin | |
250 g | salmon fillet |
25 g | dill |
1 tbsp | grainy mustard |
2 tsp | lemon juice |
salt | |
½ bunch(es) | chives, chopped |
100 g | plain flour |
30 g | durum wheat |
3 tsp | baking powder |
50 ml | buttermilk |
2 | eggs |
100 ml | oil |
parsley |
Instructions
Grease the loaf tin (25*11cm) and coat with breadcrumbs.Cut the salmon into approximately 1cm cubes. Combine the salmon with the dill, mustard, lemon juice and and a small pinch of salt.
Preheat the oven to 180°C (top and bottom heat).
Combine the flour, durum wheat, baking powder, ½ teaspoon of salt and the chives in a bowl. Add the buttermilk, the eggs and the oil and mix well. Fold in the salmon with the marinade.
Spoon the dough into the loaf tin, flatten and place the tin in the oven. Bake for 45-55 minutes.
Place the loaf tin on a wire rack and allow the loaf to cool for approximately 10 minutes, then remove from the tin. Allow to cool completely.
Serve in neat slices garnished with parsley.
