Ingredients
4 piece(s) | salmon fillets, 450 g, e. g. Tasmanian |
olive oil | |
some | salt and freshly ground black pepper |
400 g | baby bok choy |
100 g | leeks, sliced in rings |
1 small | onion, chopped |
1 tbsp | ginger, finely chopped |
250 g | cherry tomatoes, quartered |
170 ml | coconut milk |
Instructions
Season the fillets with salt and pepper.Wash, dry the bok choy and cut in slices. Separate the green parts from the white.
Heat the oil in a large pan and sauté the white parts of the bok choy, leek, onion and ginger for 5 minutes.
Add the tomatoes, stir-fry for a minute, then add the milk.
Stir well, season to taste and let it simmer for about 1 minute.
Add the green parts of the bok choy, place the salmon fillets onto the sauce. Pour the sauce onto the fillets.
Cover and let simmer for about 10-15 minutes until the fish is cooked through.
Serve immediatly with rice.
