This is a baked salmon with anchovies on a roasted onion and tomato bed, topped with a butter and creme fraiche lemon sauce.

Ingredients
Serves: 4- 2 large onions, sliced
- 1/4 cup balsamic vinegar
- 1/4 cup soy sauce
- 1/4 cup Riesling wine
- 2 large tomatoes, sliced
- 1/2 cup olive oil
- Salt
- Pepper
- 1 pound salmon fillet
- 1 (2 ounce) can anchovies in olive oil
- 2 tablespoons butter
- 2 teaspoons creme fraiche
- 2 teaspoons flour
- 1/4 cup capers
- Juice of 1 lemon
- 2 teaspoons chopped chives
Preparation method
Prep: 10 mins | Cook: 25 mins1. Preheat oven to 400 degrees F.
2. In the bottom of a 9×12-inch baking dish, place the onion slices; then pour the vinegar, soy sauce and Riesling over the onion layer.
3. Place the sliced tomato on top of the onion and vinegar mixture. Add the olive oil.
4. Flavor the salmon with salt and pepper on both sides, then place on top of the tomatoes and onion. Add anchovies and drizzle the anchovy oil over the dish.
5. Cover with foil and bake for 20 minutes. Uncover, add a few shakes more of pepper, and increase heat to broil; broil dish for 5 minutes.
6. While fish is broiling, prepare the sauce. Melt the butter in a saucepan on medium heat. Add salt, creme fraiche, flour and capers.
7. Cook, stirring, for 3 minutes. Add the lemon juice, chives and pepper, and cook one more minute.
8. To serve, plate the roasted vegetables on the side of the salmon. Spoon sauce over the fish.Serving Suggestion
