salmon fillet with potato crust recipe details
Ingredients
250 g | carrots, peeled and thinly sliced |
350 g | leek, sliced |
salt and freshly ground black pepper | |
300 g | celery, sliced |
600 g | salmon fillet |
300 g | potatoes, peeled and thinly sliced |
150 g | single cream |
45 g | butter |
oil | |
150 ml | white wine, dry |
1 tsp | instant vegetable stock |
Instructions
In a saucepan, melt half of the butter. Preheat the grill. Place the salmon fillets into an oiled casserole dish and season with salt and pepper. Arrange the potatoes overlapping on top of the fish. Brush with the melted butter and season with salt and pepper. Grill for 10-15 minutes.Melt the remaining butter. Sauté the vegetables for 4-5 minutes. Season with salt and pepper. Pour in the wine and the cream and bring to a boil. Reduce the heat, cover and simmer for 4-5 minutes. Season to taste with salt, pepper and vegetable stock.
Serve the salmon together with the vegetables.
