I was bored with regular Canadian Bacon, and had some smoked salmon left over, had to try it, and now it is a hit for my friends and family. For ease, and easier cleanup, I use a sauce from a pack, turns out just fine.

Ingredients
Serves: 8- 1 packet Hollandaise sauce mix
- 8 large eggs
- 4 English muffins
- 1 tomato, sliced thin
- 1 (4 ounce) package smoked salmon
- 1 teaspoon cayenne pepper (optional)
- 1 teaspoon smoked paprika
- 2 teaspoons chopped fresh cilantro
Preparation method
Prep: 10 mins | Cook: 20 mins1. Prepare Hollandaise sauce per packet, or make from scratch. Poach eggs, and toast split muffins. Place tomato slice, salmon, and egg on toasted muffin, and top with Hollandaise. Place a pinch of paprika, cayenne, and cilantro over each serving. Serve.
