- Ingredients
- 1 cup sugar
- 3/4 cup oil
- 2 eggs
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1-1/2 cup grated carrots
- 3/4 cups walnuts
- 3/4 cup dates or white raisins
Mix the sugar, oil, and eggs together well. Add flour, baking soda, baking powder, cinnamon, and salt. Then, add carrots, walnuts, and dates or raisins. Pour batter into a greased loaf pan at bake at 350 degrees until toothpick inserted in center comes out clean.
