Ingredients

Serves: 4
  • 8 eggs
  • 3 tablespoons water
  • Salt and pepper
  • 1 tablespoon chopped fresh dill
  • 3 tablespoons sour cream
  • 2 tablespoons butter
  • 4 ounces sliced smoked salmon, cut into bite-sized ribbons
  • 1 (14 ounce) can baby artichokes, rinsed, drained and sliced into quarters

Preparation method

Prep: 15 mins | Cook: 5 mins

1. In a mixing bowl, beat eggs with water, salt, and pepper until foamy. In a separate bowl, stir dill into sour cream. Preheat broiler to High.
2. Melt butter in a nonstick, oven-safe skillet over medium heat. Pour egg mixture into melted butter and let cook without stirring. As edges set, lift them up with a spatula to allow uncooked egg to run underneath.
3. When egg is almost completely set, sprinkle with smoked salmon and artichoke hearts. Broil for 1 minute, until top is golden-brown. Garnish with sour cream mixture and serve in wedges.
