Ingredients
Serves: 4- 8 eggs
- 3 tablespoons water
- Salt and pepper
- 1 tablespoon chopped fresh dill
- 3 tablespoons sour cream
- 2 tablespoons butter
- 4 ounces sliced smoked salmon, cut into bite-sized ribbons
- 1 (14 ounce) can baby artichokes, rinsed, drained and sliced into quarters
Preparation method
Prep: 15 mins | Cook: 5 mins1. In a mixing bowl, beat eggs with water, salt, and pepper until foamy. In a separate bowl, stir dill into sour cream. Preheat broiler to High.
2. Melt butter in a nonstick, oven-safe skillet over medium heat. Pour egg mixture into melted butter and let cook without stirring. As edges set, lift them up with a spatula to allow uncooked egg to run underneath.
