Ingredients
Serves: 4- 2 tablespoons olive oil
- 4 green onions, chopped
- 1 1/2 teaspoon grated ginger
- 2 tablespoons sake
- 4 1/4 cups chicken stock
- 1 chicken breast, skinless and boneless, finely diced
- 4 corn cobs, kernels cut from cob
- 1 1/2 tablespoons cornmeal
- 1 handful cilantro, roughly chopped, to serve
- 1 large red chile, seeded and finely chopped, to serve
Preparation method
Prep: 10 mins | Cook: 20 mins1. Heat oil in saucepan over medium heat. Stir the green onion and ginger into the hot oil and cook for 1 minute. Add sake and stir for 1 minute.
2. Stir in the chicken stock, chicken, and corn kernels. Bring to a boil. Reduce heat and simmer for 5 minutes.
3. In a small bowl, whisk the cornmeal with 3 tablespoons of cold water. Pour very slowly into the hot broth and stir, letting the cornmeal cook for about 1 minute.
4. Serve soup topped with cilantro and red chile to taste.
