- Ingredients – Orange Walnut Dressing
- One 12-ounce can orange juice concentrate
- 1-1/2 cups canola oil
- 1 cup rice wine vinegar
- 2-1/2 Tablespoons dried basil
- 1-1/2 teaspoons crushed fresh garlic
- 3/4 teaspoon freshly ground black pepper
- 2 dashes Tabascopepper sauce
Use at least 2 different greens, preferably 3 (Bibb lettuce, Romaine lettuce, spinach, radicchio, or Boston lettuce). Cut a piece of scallion (2-1/2 inches). Trim off roots, leaving 3/4-inch section whole, and slice the scallion lengthwise, creating branches. Place cut scallion in ice water for several hours until the branches open up in a flower. Place sweet red pepper, scallion brush, orange sections, and orange dressings atop greens. Garnish (optional) with walnuts and fresh basil or walnuts and fresh flowers (pansy, violet, or other edible flowers).
Yield: 32 ounces dressing or approximately 20 servings of 1-1/2 ounces each.
