Swordfish are huge and fast, like NFL linebackers, but they cook up so light. Try them with this marinade for a refreshing summer dinner.

Ready in: 50 mins

Ingredients

Serves: 2

  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon minced fresh rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 (5 ounce) swordfish steaks
  • 1 lemon, quartered

Preparation method

Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, marinating

1. Combine all ingredients except swordfish in a shallow pan. Add swordfish, turn to coat, and cover with plastic wrap. Refrigerate for 30 minutes to marinate. Drain.

2. Preheat grill to medium-high and lightly oil grate.

3. Grill swordfish for about 10 minutes, turning once, until fish is thoroughly cooked. Serve with lemon to squeeze over.
