Swordfish are huge and fast, like NFL linebackers, but they cook up so light. Try them with this marinade for a refreshing summer dinner.

Ingredients
Serves: 2- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 teaspoon minced fresh rosemary
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 (5 ounce) swordfish steaks
- 1 lemon, quartered
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 30 mins, marinating1. Combine all ingredients except swordfish in a shallow pan. Add swordfish, turn to coat, and cover with plastic wrap. Refrigerate for 30 minutes to marinate. Drain.
2. Preheat grill to medium-high and lightly oil grate.
3. Grill swordfish for about 10 minutes, turning once, until fish is thoroughly cooked. Serve with lemon to squeeze over.
