Ingredients

400 g plain flour, plus extra for dusting
1 sachet easy-blend dried yeast
1 tsp salt
1 tbsp coriander seed, lightly crushed
2 tsp dried oregano
200 ml lukewarm water
3 tbsp olive oil, plus extra for greasing
150 g sun dried tomatoes in oil, drained, patted dry and chopped
85 g feta cheese, patted dry and diced
115 g black olives, patted dry, stoned and sliced

Instructions

Combine the flour, yeast, salt, coriander seeds and oregano. Make a well in the centre and gradually add most of the water and the oil to knead a dough. Add the remaining water, if needed.

Place on a floured surface and knead for at least 6 minutes. Knead in the tomatoes, the feta cheese and olives.

Form the dough to a ball and lightly coat it with oil. Cover and allow the dough to double in volume.

Transfer the dough onto a floured surface. Knead lightly and shape it once more into a ball. Place on a lightly floured baking parchment, cover and set aside to rise until it doubles again.

Preheat the oven to 230°C/ 450° F/ Gas Mark 8.

Lightly dust the top of the loaf with flour. Using a knife, cut slashes in the top.

Bake in the preheated oven for 20 minutes, lower the temperature to 200° C/ 400° F/ Gas Mark 6 and bake for a further 20 minutes.

Transfer to a wire rack to cool completely.
