Rustic mediterranean bread recipe details
Ingredients
400 g | plain flour, plus extra for dusting |
1 sachet | easy-blend dried yeast |
1 tsp | salt |
1 tbsp | coriander seed, lightly crushed |
2 tsp | dried oregano |
200 ml | lukewarm water |
3 tbsp | olive oil, plus extra for greasing |
150 g | sun dried tomatoes in oil, drained, patted dry and chopped |
85 g | feta cheese, patted dry and diced |
115 g | black olives, patted dry, stoned and sliced |
Instructions
Combine the flour, yeast, salt, coriander seeds and oregano. Make a well in the centre and gradually add most of the water and the oil to knead a dough. Add the remaining water, if needed.Place on a floured surface and knead for at least 6 minutes. Knead in the tomatoes, the feta cheese and olives.
Form the dough to a ball and lightly coat it with oil. Cover and allow the dough to double in volume.
Transfer the dough onto a floured surface. Knead lightly and shape it once more into a ball. Place on a lightly floured baking parchment, cover and set aside to rise until it doubles again.
Preheat the oven to 230°C/ 450° F/ Gas Mark 8.
Lightly dust the top of the loaf with flour. Using a knife, cut slashes in the top.
Bake in the preheated oven for 20 minutes, lower the temperature to 200° C/ 400° F/ Gas Mark 6 and bake for a further 20 minutes.
Transfer to a wire rack to cool completely.
