Russian honey mousse recipe details
Ingredients
180 ml | honey |
4 medium | eggs, separated |
240 ml | whipped cream, use only to substitute for egg whites if preferred or required |
Instructions
Place the yolks in a medium pan and heat gently. Gradually add the honey. Simmer over a very low heat and stir continuously until thick. Remove from the heat and cool.If using the egg whites, whisk until stiff and fold in to honey mixture.
If using cream, whip until stiff and fold in to honey.
Divide into 6 (or 8) serving dishes and chill before serving.
Can serve 6-8.
