Rum and raisin ice cream recipe details
Ingredients
600 ml | single cream |
4 large | eggs, yolks only |
125 g | caster sugar |
90 g | seedless raisins, chopped |
3 tbsp | dark rum |
Instructions
Soak the raisins in the rum for several hours or overnight.Heat the cream in a heavy saucepan over a medium-low heat. Continue to heat until close to boiling, stirring constantly.
Whisk the egg yolks with the sugar until light and fluffy. Pour the cream slowly into the yolks and whisk thoroughly. Pour the mixture back into the pan and heat gently until sufficiently thickened to coat the back of a spoon.
Remove from heat and allow to cool. Chill in refrigerator until quite cold. Transfer to an ice cream maker and freeze according to instructions. About 4 or 5 minutes from the end of the process, add the rum and raisins and allow to churn to mix well.
Serve immediately or transfer to an airtight container to freeze and partly set for about an hour. The alcohol will prevent this mixture from becoming solid.
