Rum and raisin ice cream recipe details
- Ingredients:
- 3/4 cup raisins
- Dark rum
- 4 eggs, separated
- 3/4 cup sugar
- 1-1/4 cups whipping cream
- 2 teaspoons instant coffee granules
- 2 Tablespoons boiling water
You’ll love the fabulous taste of plump, rum-filled raisins in this rich dessert.
Place raisins in a screw-cap jar and cover with dark rum. Seal and leave for 3 days at room temperature. Raisins swell with rum and the ice cream can now be made.
Mix coffee granules with boiling water. Mix this essence with the egg yolks. Beat egg whites until stiff. Add sugar gradually. Beat whipping cream until stiff. Combine the egg yolk mixture with the egg whites and the whipped cream. Add the rum and raisins and mix well. Pour into a container and freeze. Serve from freezer.
