Rum and pineapple hot toddy recipe details

Ingredients
Makes: 4 drinks- 1 cup pineapple juice
- 3 tablespoons maple syrup
- 1 tablespoon fresh lemon juice
- 1 cinnamon stick
- 1/2 cup heavy cream
- 1 cup dark rum
Preparation method
Prep: 15 mins | Cook: 5 mins1. Combine juice, 2 tablespoons maple syrup, lemon juice, and cinnamon stick in a saucepan. Place over medium heat. When mixture boils, reduce heat and simmer for 5 minutes. Turn off heat and remove the cinnamon stick.
2. While pineapple mixture is simmering, combine cream and 1 tablespoon maple syrup in a mixing bowl. Beat with an electric hand mixer until it gets stiff and becomes whipped cream.
3. Pour pineapple mixture into mugs, divide the rum among the mugs, and top with whipped cream. Serve.
