Ingredients

300 g rye flour or spelt flour
300 ml water, lukewarm

Instructions

Mix 100g flour and 100ml water in a dish (please take a plastic or glas dish, not metal in order to avoid a chemical reaction), stir until smooth. Put aside in a warm place for 12 hours.

Then mix again (take a wodden spoon, or plastic – no metal) and add the same amount of flour and water as you did in the beginning.

After another 12 hours repeat the same procedure again. By now your storage will start smelling a little bit strong, because it will start to ferment. Somtimes it even smells like acetone. This is a typical smell.

After that procedure you will have a fine starter for backing bread, which tastes and smells sourly. You can take this instead of yeast because it is completely natural. You can make the conduct of this storage leaven one time up to 5 times.
