Real men rarely agree how they like their chili. That’s why I developed this recipe. I say prepare the rice and beans on the side and use my chili as a topper. You want bragging rights? Add a pinch of habanero powder (or more) to your bowl! This is also excellent on hot dogs, and of course, NACHOS!


Ready in: 6 hours 15 mins

Ingredients

Serves: 10
  • 2 (14 1/2 ounce) cans diced tomatoes with onion and garlic
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel)
  • 2 pounds ground pork
  • 1/2 white onion, chopped fine
  • 1 tablespoon minced garlic
  • Red savina habanero powder, at your peril, to taste
  • 1/2 cup coffee
  • 2 tablespoons sugar
  • 1 packet taco seasoning mix
  • 1 cup water
  • Salt, to taste
  • Pepper, to taste
  • Tabasco, to taste

Preparation method

Prep: 15 mins | Cook: 6 hours

1. Open all of the cans and packages. Dump the canned tomatoes into a slow cooker set on high. Mix well. Add the meat , chopped onion, garlic, habanero powder, and dump the taco seasoning on top. Let this mixture cook for 1hr.
2. Set the slow cooker to low. Use a spatula to chop the meat into small pieces. Add the coffee and sugar. Let this mixture cook for 5 hrs.
3. Use a stick blender to chop the vegetables and meat to the desired size. Be careful, you don’t want chili soup! Add water to adjust the consistency.
4. You may now add salt, pepper, and Tabasco to taste. If you have the CAJONES, you can also add more habanero powder!Tip

Let this mixture cool to room temperature and then re-heat to increase the yumminess. Use tabasco to adjust the heat. For those with cajones use habanero powder. Sour cream and cheese will cool it down.

Serving suggestion

Excellent by itself or as a topper for rice, beans, and of course..NACHOS!

Drink pairing

Beer needs to be consumed before, during, and after the meal!
