Roasted zucchini and squash
Roasted Zucchini and Squash
- 4 each small zucchini and summer squash, cut in small strips
- 1 large onion, sliced
- 1 clove garlic, minced
- 1 teaspoon basil
- 1 teaspoon cilantro
- salt and pepper to taste
- Spay on vegetable oil
Put zucchini and squash in a large bowl and toss with remaining ingredients. Spread on cookie sheet sprayed with vegetable oil.
Bake about 20 minutes in 400-degree oven.
