Roasted red potato salad recipe details
The roasted red potatoes and spices give an interesting twist to potato salad.

Ingredients
Serves: 10- 2 tablespoons olive oil
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon yellow curry
- 1/2 teaspoon parsley
- 1/2 teaspoon paprika
- 8 red potatoes – unpeeled,washed, and cubed
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 4 eggs – hard boiled, then crumbled
- 1 tablespoon sweet pickle relish
- 2 tablespoons prepared mustard
- 1/4 cup minced white onion
- 1/4 cup minced celery
- 1/4 cup minced olives
- 4 strips bacon – cooked then crumbled
- 1/4 cup shredded carrot
Preparation method
Prep: 20 mins | Cook: 25 mins1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix 2 tbs of olive oil with the dry ingredients in a large bowl.
3. Toss the cubed potatoes in the mixture until coated, and then spread them evenly on a baking sheet.Bake 15 – 20 minutes or until they are done and crispy then cool 5 min in refrigerator.
4. Whisk mayonnaise, sour cream, eggs, relish, mustard, onion, celery, and olives in a large bowl. Add cooled potatoes and bacon, then toss to coat. Sprinkle shredded carrot over the top. Serve at room temperature for best flavor.
