A quick and simple omelet. Flavor comes from those jarred roasted red peppers.

Ingredients
Serves: 2- 3 eggs
- 3 tablespoons water
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup chopped roasted sweet red peppers
- 1/4 cup shredded Muenster cheese
- 2 green onions, chopped
Preparation method
Prep: 10 mins | Cook: 10 mins1. In a mixing bowl, beat the eggs, water, salt, and pepper together.
2. First, spray a nonstick skillet with oil. Then heat over medium-high flame. Pour half of the egg mixture into the hot skillet and let it set at the edges. When the edges begin to set, lift them up carefully with a spatula and let the uncooked eggs run underneath. Continue until all eggs are set.
3. Place half of the red pepper, half of the cheese, and half of the onions on the eggs, fold the circle in half, and serve. Repeat with remaining egg mixture and filling.
