Ingredients
500 g | leeks, trimmed, sliced |
500 g | tomatoes, chopped |
4 tbsp | olive oil |
2 clove(s) | garlic, crushed |
parsley | |
20 ml | white wine |
3 tbsp | lemon juice |
salt and pepper, to taste |
Instructions
Heat the oil in a deep frying pan. Add the leeks. Try to keep the slices whole and separate. Fry over low heat until the leeks are soft and slightly browned. Season the leeks with the salt and pepper. Remove the leeks from the pan and set aside.Put the tomatoes into the pan. Add the garlic and parsley. Stir. Cook until a sauce thickens. Add lemon juice and wine. Stir.
To serve pour tomato sauce over the leeks.
