Roasted eggplant parmesan ciabatta pizza recipe details

Ingredients
Serves: 4- 2 small eggplants, halved lengthwise
- 1/4 cup olive oil
- Salt and pepper
- 1 onion, finely chopped
- 2 large cloves garlic, minced
- 1 (14 1/2 ounce) can diced roasted tomatoes
- 1/3 cup basil leaves, sliced thinly
- 1 loaf ciabatta bread, cut in half horizontally
- 1/2 cup grated Parmesan cheese
- 8 slices mozzarella cheese
Preparation method
Prep: 35 mins | Cook: 5 mins1. Preheat oven to 450 degrees F.
2. Use a sharp knife to score the eggplant flesh into cubes, not cutting through the skin. Then brush with 1 1/2 tablespoons olive oil for each half, sprinkle with salt and pepper, and place open-side down on a baking sheet.
3. Bake for 20 minutes, or until eggplant is soft.
4. While eggplant is roasting: pour remaining 1 tablespoon oil into a saucepan and set over medium heat. Cook onion and garlic in hot oil for about 7 minutes, until onions turn translucent, then add tomatoes, more salt and pepper to taste, and basil. Stir to combine.
5. Use a spoon or firm spatula to scrape out the roasted eggplant flesh from the skins. Cover cut sides of ciabatta halves with the eggplant, then spoon the tomato sauce on top. Sprinkle with Parmesan and mozzarella.
6. Set ciabatta halves on a baking sheet. Bake for 5 minutes, or until pizzas are heated through and cheese has melted. Slice into wedges and serve.
