Riverwind biscuits recipe details
- Ingredients:
- 2 cups self-rising flour
- 3/4 or more cup vegetable shortening (make them very short)
- 3/4 cup milk — 2% is fine
Cut shortening into flour with a pastry cutter (I use an antique one and I believe they taste better for it). Add milk and mix to form dough. Turn dough out on a floured board; dough will be damp and cold to the touch. Knead 6 times, adding more flour each time. Cut into desired shapes with a cookie cutter. Riverwind uses its signature pig shape, but varies this with pumpkins in the fall, hearts for Valentine’s Day or anniversaries, and Christmas trees at Christmas. Round biscuits are fine too, but contribute to breakfast boredom after a while. Serve hot.
