Rich beef ragu recipe details
Ingredients
2 kg | minced beef |
olive oil | |
2 sprig(s) | rosemary |
2 sprig(s) | sage |
3 medium | onions, chopped |
8 clove(s) | garlic, minced |
2 | carrots, peeled chopped |
750 ml | red wine, or less, depending on taste |
250 g | canned chopped tomatoes |
salt and pepper, to taste | |
100 g | Parmesan cheese, grated |
Instructions
Pour some olive oil into a large pan and heat over low geat.Add beef and stir until beef is well browned. Add rosemary and sage sprigs, onion, garlic, carrot and celery.
Reduce heat and sautee until vegetables are softened, about 5 minutes.
Add wine and continue to simmer until liquid has reduced by half, about 15 minutes.
Add tomatoes and their juices.
Preheat oven to 180░C.
Pour mixture into an oven proof dish and cook, covered, in the oven for 3-3.5 hours.
Season to taste with salt and pepper to taste.
To serve, spoon beef rag¨ over pasta and garnish with grated Parmesan.
