Duck breast in red wine sauce recipe details
Ingredients
2 | duck breasts |
1 | onion, chopped |
150 ml | vegetable stock |
1 tsp | flour |
1 tbsp | tomato puree |
150 ml | red wine |
salt and freshly ground black pepper |
Instructions
Preheat the oven to 200°C. Place a casserole dish into the oven.Carve the skin of the duck breasts crosswise, but don’t cut into the meat. Place the duck breasts skin side down into a cold pan and switch to high. Fry until the skin is golden brown and most of the fat has melted. Turn over the meat and fry for another minute. Season with salt and pepper. Transfer the duck breasts, skin side up, into the casserole dish in the oven and bake for 15-17 minutes.
Sauté the onion in the duck fat until translucent. Add the tomato purée and and the flour and cook stirring for a minute. Pour in the red wine and the stock and bring to a boil, stirring constantly. Reduce the heat and simmer for 15 minutes. Season to taste with salt and pepper.
When the duck breasts are ready, take out of the oven and allow to rest for 5 minutes. Carve the duck breasts into slices and serve together with the sauce.
