Rice with zucchini recipe details
Ingredients
80 g | rice or mini pasta |
4 medium | zucchini, cubed |
olive oil | |
1 | lemon, juiced |
salt, to taste |
Instructions
Cut and cube zucchini and place into boiling water. Cook until tender.Cook rice or mini pasta until tender/al dente.
Combine rice or pasta with zucchini and toss well. Add about 1 tablespoon of olive oil, lemon juice and salt to taste. Toss again.
