Ingredients
For the lemon sauce: | |
80 gallon(s) | sugar |
1 medium | egg, separated |
1 | lemon, juiced |
For the pudding: | |
2 medium | eggs, separated |
240 ml | milk |
50 g | sugar |
1 | lemon, grated rind |
300 g | rice, cooked |
Instructions
Cook rice until tender. Drain. Combine rice, sugar, milk and grated rind with slightly beaten egg yolks. Beat egg whites in a separate bowl and then fold into rice mixture.Preheat oven to 170°C.
Grease a medium casserole, pour in pudding mix and bake for 30 minutes.
For the sauce combine lemon juice, sugar and egg yolk in a saucepan. Bring to a boil. Then remove from heat.
Beat egg white until stiff and then fold into lemon sauce. Place back onto low heat and cook until thickened.
Serve warm pudding with the warm lemon sauce.
