Ingredients
115 g | butter, melted |
200 g | flour |
100 g | sugar |
60 g | dried coconut |
3 medium | eggs |
240 g | granulated sugar |
1 tsp | baking powder |
60 ml | lemon jucie |
1 tsp | grated lemon rind |
powdered sugar |
Instructions
Combine melted butter, 100g flour, brown sugar and 20g coconut. Press into bottom of dish. Microwave on High for 2 minutes to set.Crack eggs into a microwave-safe mixing bowl. Add all remaining, except for powdered sugar and beat thoroughly.
Cover bowl with wax paper and microwave 3 to 4 minutes, or until mixture bubbles and thickens, stirring every minute.
Pour filling into crust, spreading out evenly with spatula.
Microwave on High 1 to 2 minutes longer, or until set. Leave to cool and then cut into bars. Dust with powdered sugar.
