Lemon Coconut Bars recipe

|115 g||butter, melted|
|60 g||dried coconut|
|240 g||granulated sugar|
|1 tsp||baking powder|
|60 ml||lemon jucie|
|1 tsp||grated lemon rind|
Combine melted butter, 100g flour, brown sugar and 20g coconut. Press into bottom of dish. Microwave on High for 2 minutes to set.
Crack eggs into a microwave-safe mixing bowl. Add all remaining, except for powdered sugar and beat thoroughly.
Cover bowl with wax paper and microwave 3 to 4 minutes, or until mixture bubbles and thickens, stirring every minute.
Pour filling into crust, spreading out evenly with spatula.
Microwave on High 1 to 2 minutes longer, or until set. Leave to cool and then cut into bars. Dust with powdered sugar.
