Ribbon noodles with chicken breast and aubergine recipe details
Ingredients
500 g | ribbon noodles |
1 large | aubergine, diced |
salt and freshly ground black pepper | |
5 | shallots, chopped |
2 clove(s) | garlic, minced |
1 ½ bunch(es) | thyme, chopped |
7 tbsp | oil |
200 ml | dry white wine |
200 ml | single cream |
50 g | butter |
4 | chicken breast fillets |
Instructions
Season the diced aubergine with salt and allow to stand for 15 minutes. In a pan, heat the oil. Sauté ¾ of the shallots, the garlic and the aubergine until golden. Remove from the heat. Stir in ½ of the thyme. Season with salt and pepper.Cook the pasta in salted water until al dente.
In a saucepan, heat 1 tablespoon of oil. Sauté the remaining shallots with the remaining thyme until soft. Pour in the wine and the cream and cook over low heat until the sauce has thickened. Remove from the heat and stir in the butter. Season to taste with salt and pepper.
Season the meat with salt and pepper. Heat the remaining oil and fry the chicken fillets all around over medium heat until golden all around and just cooked through. Take out of the pan and allow to rest on a warm place for 5 minutes. Drain the cooked pasta and add to the sauce. Toss. Divide the pasta with the sauce and the aubergines onto warmed plates. Cut the fillets into neat slices and arrange the meat on top of the pasta.
