Ribbon noodles in a spinach and gorgonzola sauce recipe details
Ingredients
250 g | spinach |
1 | onion, chopped |
1 | red chili, chopped |
150 g | Gorgonzola cheese, crumbled |
200 g | single cream |
30 g | freshly grated Parmesan cheese |
salt and freshly ground black pepper | |
400 g | ribbon noodles |
2 tbsp | butter |
250 ml | vegetable stock |
Instructions
Cook the noodles in salted water until al dente, then drain.In a pan, melt the butter and sauté the onion and the chili. Pour in the cream and the stock. Stir in the Gorgonzola cheese and simmer until the cheese has melted. Add the spinach and cook for 2-3 minutes. Season to taste with salt and pepper.
Add the cooked noodles and mix well. Serve sprinkled with the Parmesan cheese.
