Rhubarb sticky muffins details
- Ingredients
- 1 cup rhubarb, finely chopped
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/3 cup butter
- 1/3 cup sugar
- 1 egg
- 1-1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup milk
Combine rhubarb, 1/4 cup butter, and 1/2 cup brown sugar and place in bottoms of greased muffin tin. Beat 1/3 cup butter, 1/3 cup sugar, and egg. In a separate bowl, sift flour, baking powder, salt, and nutmeg and add to butter mixture alternately with milk. Spoon on top of rhubarb and bake at 350 degrees for 20 to 25 minutes.
