Red Tomato Relish recipe

|2 kg||tomatoes, skinned and chopped|
|2 large||onions, chopped|
|600 ml||white vinegar|
|1 tbsp||curry powder|
|1 tbsp||English mustard|
|½ tsp||cayenne pepper|
Mix curry powder, salt, cayenne pepper and mustard together with a little of the vinegar to form a paste.
Place all ingredients into a large saucepan and bring to boil, then simmer for approximately 1 hour, stirring occasionally, until the tomatoes are cooked and the sauce has thickened.
Bottle whilst hot in sterilised jars and allow to cool.
Fills 5 normal jam jars.
