Red hot chilli pepper soup recipe details
Ingredients
6 large | red bell peppers |
1 large | onion, chopped |
1 clove(s) | garlic, chopped |
50 g | butter |
1 tbsp | tomato puree |
1 ½ l | vegetable stock |
4 | long red chillies |
zest of 1 lime, grated | |
juice of 1 lime | |
salt and pepper to taste |
Instructions
Heat the bell peppers on a gas flame until the skin begins to blacken and blister. Cool and then peel off the skin, de-seed and chop.Do the same for the chillies. Heat them above the gas ring until they begin to blister. Then de-seed and chop finely.
In a pan combine the bell peppers, onion, garlic and chillies with the butter. Cover and allow to sweat over low heat until soft and just caramelized for about 15 minutes. Then stir-in the tomato purée and add the stock.
Remove from heat and transfer to a blender or food processor and purée until smooth.
Transfer back to the pan, heat through and then stir-in the lime zest and lime juice.
Adjust the seasoning and serve in soup bowls.
