A meatless chili that’s full of flavor thanks to chili powder, garlic and oregano.

Ingredients
Serves: 6- 1/2 pound sliced mushrooms
- 2 green or red bell peppers, chopped
- 2 celery ribs, chopped
- 1 onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 (28 ounce) can diced tomatoes (don’t drain)
- 2 (15 ounce) can kidney beans, rinsed and drained
- 1 large carrot, chopped or grated
- 1/2 cup water
- 1/2 cup BBQ sauce
- 1/4 cup chili powder
- 1 teaspoon liquid smoke
Preparation method
Prep: 10 mins | Cook: 8 hours1. Warm the olive oil in a large skillet over medium heat.
2. Add the mushrooms, peppers, celery, onion, and jalapeno to the hot oil and cook, stirring, until onion browns, about 10 minutes. Stir in the garlic, oregano, and cumin and cook for 2 more minutes.
3. Pour the cooked vegetables into a slow cooker, dump in the tomatoes, beans, carrot, water, BBQ sauce, chili powder, and liquid smoke, and cover.
4. Turn heat on to Low and cook for 8 hours.
