Quick and easy quesadillas. You’ll be eating a tasty lunch in less than ten minutes.
Ready in: 20 mins

Ingredients

Serves: 4
  • 1 cup canned black beans, rinsed and drained
  • 1 green onion, finely chopped
  • 1/2 teaspoon chili powder
  • 4 (8-inch) tortillas
  • 1 cup shredded Cheddar cheese

Preparation method

Prep: 10 mins | Cook: 10 mins

1. Smash beans with onion and chili powder. Spread some of the beans on one half of all 4 tortillas. Sprinkle with cheese and fold in half.
2. Put a skillet over medium-high heat. When hot, place quesadilla in skillet. Cook for about 1 1/2 minutes, then flip and continue to cook until cheese is melted. Cut into wedges and serve. Repeat with the other quesadillas.
