Ingredients
Serves: 4- 1 cup canned black beans, rinsed and drained
- 1 green onion, finely chopped
- 1/2 teaspoon chili powder
- 4 (8-inch) tortillas
- 1 cup shredded Cheddar cheese
Preparation method
Prep: 10 mins | Cook: 10 mins1. Smash beans with onion and chili powder. Spread some of the beans on one half of all 4 tortillas. Sprinkle with cheese and fold in half.
2. Put a skillet over medium-high heat. When hot, place quesadilla in skillet. Cook for about 1 1/2 minutes, then flip and continue to cook until cheese is melted. Cut into wedges and serve. Repeat with the other quesadillas.
