Ingredients
1 | aubergine, cleaned and diced |
2 | courgettes, cleaned and diced |
4 | bell peppers, red and yellow, cleaned and diced |
1 can(s) | peeled tomatoes |
1 large | onion, chopped |
4 clove(s) | garlic, minced |
1 tsp | dried thyme |
½ tsp | dried lavender flowers, crushed |

100 ml | extra vergin olive oil |
salt and pepper | |
75 g | tomato puree |
Instructions
Place the aubergine pieces into a strainer and sprinkle with salt. Let stand for 10 minutes then rinse and pat dry.In a large high rimmed skillet heat the olive oil. Sauté onion until lucent. Add courgette, bell peppers and aubergine and fry for 5 minutes. Stir in the tomato puree. Add salt and pepper, garlic, thyme and lavender and the peeled tomatoes. Cook over low heat until the vegetables are done but still a bit firm to the bite. Add a drop of water, if necessary. Season to taste with salt, pepper and sugar.
Serve with fresh French bread as a vegetarian main dish or as a side dish with lamb.
