Ingredients

1  aubergine, cleaned and diced
2  courgettes, cleaned and diced
4  bell peppers, red and yellow, cleaned and diced
1 can(s) peeled tomatoes
1 large onion, chopped
4 clove(s) garlic, minced
1 tsp dried thyme
½ tsp dried lavender flowers, crushed
sugar
100 ml extra vergin olive oil
salt and pepper
75 g tomato puree

Instructions

Place the aubergine pieces into a strainer and sprinkle with salt. Let stand for 10 minutes then rinse and pat dry.

In a large high rimmed skillet heat the olive oil. Sauté onion until lucent. Add courgette, bell peppers and aubergine and fry for 5 minutes. Stir in the tomato puree. Add salt and pepper, garlic, thyme and lavender and the peeled tomatoes. Cook over low heat until the vegetables are done but still a bit firm to the bite. Add a drop of water, if necessary. Season to taste with salt, pepper and sugar.

Serve with fresh French bread as a vegetarian main dish or as a side dish with lamb.
