Rapid Apple Pudding in the Microwave recipe

Ingredients
1 large | eating apple, peeled, cored and diced |
85 g | sultanas |
130 g | butter |
130 g | mixed demerara and granulated sugar |
1 large | egg |
115 g | self-raising flour |
90 g | suet |
1 tbsp | cognac |
½ tsp | mixed spice |
Instructions
Soften the butter in the microwave for 1 minute on high.Cream the butter and the sugar. Sift in the flour, mixed spice and suet. Add the egg and the Cognac and blend in.
Add the sultanas and the diced apple.
Turn the mixture into a greased bowl and cover with microwaveable cling film, with two holes in it.
Microwave for 5 minutes on high, 1 minute rest, then 5 more on high. Rest for 5 minutes and serve with cream.
