Rachel pudding recipe details
Ingredients
500 g | fresh breadcrumbs |
350 g | apples, peeled, cored and finely chopped |
225 g | currants |
110 g | vegetable suet |
4 medium | eggs, beaten |
2 medium | lemons, zest and juice |
Instructions
Mix all the ingredients in a large bowl to make a sticky dough. Pour the mixture into a well-buttered pudding basin.Cover with pleated greaseproof paper and foil. Place in the top portion of a steamer and fill the bottom section with boiling water. Steam for about 3 hours and check the water level about every 30 minutes and top up with more boiling water as necessary.
Turn out and serve hot with a chocolate sauce.
